Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

8 eggs
1 c. cottage cheese
1/4 c. milk
1 tsp. dried oregano leaves
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. Pepper
1 package frozen chopped spinach
1 1/2 c. shredded Cheddar cheese or mozzarella cheese
6 Morningstar Farms® Veggie Sausage Patties
1/2 c. Sliced green onions
8 cherry tomatoes (optional)
8 Fresh parsley sprigs (optional)

Instructions

In large bowl beat together eggs, cottage cheese, milk, oregano, garlic powder, salt, and pepper.
Squeeze excess moisture out of spinach. Stir spinach, Cheddar cheese, patties, and onions into egg mixture. Pour into 13 x 9 x 2-inch baking dish coated with cooking spray. Bake at 325 degrees for 35 to 40 minutes or until set. Let stand 10 minutes before serving.
Cut into squares to serve. Garnish with cherry tomatoes and parsley, if desired. This recipe has been tested and endorsed by Kellogg and Morningstar Farms®.
