Health and fertility benefits of Broccoli Rabe Pesto
Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
Ingredients
6 tbsps parmesan cheese, shredded
20 leaves fresh basil
1/3 cup olive oil
juice of 1 lemon
8 oz broccoli rabe
3 tsps garlic
1/4 cup slivered almonds
Instructions
1. Bring a pot of water to a boil. Blanch the broccoli rabe for 3 minutes, then put in an ice bath to stop the cooking process.
2. Add everything to a food processor, except the olive oil. Pulse until combined, then drizzle in the olive oil, scraping the sides of the processor to make sure everything gets processed.
3. Season with salt and pepper to taste.
4. Note: delicious on crispy toast rounds or a couple tablespoons mixed with hot cooked pasta.
