Ingredients

1/3 second spray butter cooking spray
16 oz boneless skinless chicken breast
2 tbsps soy sauce
4 large eggs
4 cups chicken stock
1 tsp minced garlic
2 stalks green onions
1 cup frozen peas and carrots, thawed
2 cups long grain white rice

Instructions

1. Cut up the chicken and stir-fry until no longer pink; set aside.

2. Finely chop the green onions (including green stems) and set aside.

3. Scramble the eggs in a small skillet and set aside.

4. Bring the chicken broth to a boil in a large skillet.

5. Add the soy sauce, garlic and rice.

6. Stir, cover and reduce heat. Simmer for 20 minutes.

7. Quickly add the chicken, peas and carrots, and egg to the rice.

8. Cover for another 10 minutes or until the rice is cooked and soft.
