Ingredients

16 oz shredded mozzarella cheese, part skim
1 tsp ground oregano
1 tsp pepper
1/2 tsp salt
1 tsp olive oil
4 breasts, bone and skin removed chicken breast
2 cups pasta sauce
1 clove garlic
1 can tomato paste

Instructions

1. Sauté garlic (onion optional) in olive oil. When golden brown add, tomato paste, pasta sauce, oregano, salt and pepper. Bring to a boil. Place on medium heat.

2. Take the chicken breasts and tenderize with a meat tenderizer, pounding them until thin (tip: spray clear wrap with non-stick spray and wrap chicken before tenderizing for quick clean up and no "sticky" trouble).

3. Season chicken with salt and pepper. You can also sprinkle a little garlic powder and parmesan cheese if you like.

4. Place chicken "crusts" on greased baking sheet. Top with sauce mixture. Sprinkle with mozzarella cheese and top with anything else you enjoy on your pizza.

5. Bake at 350 °F (175 °C) for 30 minutes or until chicken is cooked through. Allow to cool and enjoy!
