Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

8 cups 1% low-fat milk
1 cup uncooked jasmine or basmati rice
3/4 cup plus 2 tablespoons sugar, divided
1/2 teaspoon kosher salt
1/2 teaspoon ground cardamom
1 (2-inch) cinnamon stick
1 vanilla bean, split lengthwise
Cooking spray
3 peaches, sliced
1/8 teaspoon ground cinnamon

Instructions

Combine milk, rice, 3/4 cup sugar, and next 4 ingredients (through vanilla bean) in a 6-quart electric slow cooker coated with cooking spray; stir well. Cover and cook on LOW for 7 1/2 hours. Scrape seeds from vanilla bean. Discard vanilla bean shell and cinnamon stick. Stir in remaining 2 tablespoons sugar. Serve with peach slices, and sprinkle with ground cinnamon.
