Ingredients
1/4 c. olive oil
1/4 c. rice wine vinegar
1 tbsp. finely grated ginger
2 tsp. sugar
3/4 tsp. red pepper flakes
kosher salt
2 lg. cucumbers, halve lengthwise, seeded, and sliced
1/2 lb. mini sweet peppers
1/2 red onion, chopped
1/3 c. torn basil
Instructions
Combine oil, vinegar, ginger, sugar, and pepper flakes in a bowl. Season with salt.
Add cucumbers, onion, basil, and toss to combine. Chill 15 minutes.
