Lunch: Mom's Cheesy Potatoes

Delicious but not-so diet-friendly, this creamy casserole side is reminiscent of scalloped potatoes but doesn't involve making a roux.

Ingredients

2 large frozen cubed hash browns
1 can cream-of-chicken soup
1 can cream-of-chicken soup
1 can cream-of-mushroom soup
1 container sour cream
2 c. milk
1 bag shredded Cheddar cheese

Instructions

Preheat oven to 375 degrees F.
Into a large baking pan, pour hash browns.
In a large bowl, whisk together cream-of-chicken soup, cream-of-mushroom soup, sour cream, milk, and all but 1/2 cups cheddar cheese until smooth. Pour mixture over has browns and stir together until combined; sprinkle with reserved cheddar.
Cover baking dish with aluminum foil. Bake 45 minutes. Remove foil; continue to bake 15 minutes more, or until golden and bubbling.
