Soup: Chicken Stew

A hearty and very nutritious stew that's full of goodness.

Ingredients

2 bay leaves
1 1/2 tsps pepper
1 1/2 tsps salt
8 breasts, bone and skin removed chicken
2 small carrots, chopped
1/4 cup chopped celery
2 cloves garlic, minced
1/3 tbsp parsley, chopped
2 medium potatoes, peeled, chopped
3 medium whole tomatoes, chopped
1 cup water

Instructions

1. Remove skin from chicken, along with any extra fat.

2. In large skillet, combine chicken, water, garlic, onion, salt, pepper, tomatoes and parsley.

3. Tightly cover and cook over low heat for 25 minutes.

4. Add celery, potatoes, carrots, and bay leaves and continue to cook for 15 more minutes or until chicken and vegetables are tender.

5. Remove bay leaves before serving.
