Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Brown rice is a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

1 dash pepper
1 dash salt
1 tbsp olive oil
1/2 cup cubed avocado
1/4 tbsp lemon juice
1 tsp chopped chives
1 cup pared, chopped cucumber
1/2 cup chopped spring onion
1 cup chopped sweet peppers, mixed colors
1/2 cup broad beans
1 cup cooked brown rice

Instructions

1. Simply mix together the rice, peppers, avocado, beans, two-thirds of the spring onions (scallions) and cucumber.

2. Make the dressing using the oil, lemon juice, remaining spring onion, chives, salt and pepper.

3. Drizzle dressing over the salad.
