Health and fertility benefits of Bow Ties with White Beans and Broccoli

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

1 lb. box bow-tie pasta
1 tbsp. olive oil
1 head broccoli
1 clove garlic
2 c. low-sodium chicken broth
1 can cannellini or other white beans
1 tsp. grated lemon zest
1 tbsp. fresh lemon juice
1/3 c. grated Parmesan cheese

Instructions

Cook pasta according to package directions. Drain the pasta and return it to the pot.
Meanwhile, heat the oil in a large skillet over medium heat. Add the broccoli and cook, tossing occasionally, for 3 minutes. Add the garlic and cook, tossing, for 1 minute.
Add the broth and simmer, stirring occasionally, until the broccoli is just tendner, 2 to 3 minutes more. Add the beans, lemon zest and juice and cook until heated through, 2 minutes.
Toss the pasta with the broccoli and bean mixture and serve with the cheese.
