Lunch: Mango Chutney
Homemade mango chutney that's delicious with meat.
Ingredients
2 1/2 cups mangos, diced
1 1" piece fresh ginger, peeled
1 minced dried Scotch bonnet chile
1 clove garlic, minced
1/4 teaspoon salt
1/2 cup vinegar
1/2 cup light brown sugar, firmly packed
1/2 cup raisins
pepper, to taste
Instructions
Place all ingredients in a non-reactive pan. Bring to a boil, reduce heat to low, and simmer until thick, about 25 minutes, stirring often to keep from sticking. Makes 2 1/2 cups. Let cool, and store in an airtight container.
