Dessert: Bean Cake Sandwich
A great and delicious way to use leftover beans.
Ingredients
3 cup leftover cooked white beans, (these are best cooked with a ham hock for flavor)
flour, enough to bind into patties
2 to 3 tablespoons butter, and oil, combined
1 small onion, sliced into rings
mayonnaise
white bread
Instructions
In a medium bowl, coarsely mash beans with a fork and add flour until well combined. Shape bean mixture into 4 patties. Melt butter and oil in a skillet and brown patties on each side until crispy.
Spread mayonnaise on two pieces white bread. Place patty on bread and top with onions.
