Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.
Ingredients
6 large eggs
1/2 cup whipped cream
1/2 package spinach
Roma tomatoes, diced and seeded
1/2 cup crumbled feta cheese
2 tbsps olive oil
Instructions
1. In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan.
2. Mix cream and eggs. (You can substitute milk for cream).
3. Pour egg mixture over spinach.
4. Cook over low heat until eggs are firm, or cook in the oven.
5. After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan.
6. Add tomatoes and feta cheese.
7. Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve.
8. Note: for variety use salsa and shredded cheddar instead of tomatoes and feta.
