Lunch: Cheesy Potatoes with Smoked Sausage

A childhood favorite — cheesy hash brown potato casserole — gets main-dish status when mixed with smoky sausage.

Ingredients

1 package Hillshire Farm® Smoked Sausage
1 bag refrigerated shredded hash brown potatoes
2 c. shredded Cheddar cheese
1 c. sour cream
1 medium onion
1/4 c. butter or margarine
1/4 tsp. ground black pepper

Instructions

Preheat oven to 350 degrees F. Lightly spray a 13- by 9-inch baking pan with nonstick cooking spray. Cut sausage into 1/2-inch cubes. Combine all ingredients in a large bowl.
Spread mixture evenly in prepared pan. Bake 40 to 45 minutes or until lightly browned. Let stand 5 minutes before serving.
