Ingredients

7 tbsp. unsalted butter
6 large apples
1 c. light brown sugar
2 tbsp. lemon juice

Instructions

Melt butter in large heavy-based frying pan; add apples, sprinkle evenly with sugar and juice. Cook, uncovered, over low heat, about 40 minutes, turning apples as they caramelize.
Meanwhile, make pastry. Process flour, sugar, butter, and sour cream until ingredients just come together. Knead on floured surface until smooth. Cover; refrigerate 30 minutes.
Preheat oven to 400 degrees F or 375 degrees F fan-forced.
Place apples, rounded-sides down, in 9-inch pie dish, packing tightly to ensure there are no gaps; drizzle with 1 tablespoon of the caramel in pan. Reserve remaining caramel.
Roll pastry between sheets of parchment until large enough to cover apples. Peel away one sheet of baking paper; cut pastry to fit dish. Remove remaining paper. Place pastry carefully over hot apples; tuck pastry around apples.
Bake tarte tatin about 30 minutes or until pastry is browned. Carefully turn onto serving plate, apple-side up; drizzle apple with reheated reserved caramel. View helpful photos of the some of the steps above here.
