Dessert: Donut Shortcakes

Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

6 glazed donuts
2 c. heavy cream
1/4 c. sugar
1/2 tsp. vanilla extract
1/2 lb. Strawberries, sliced

Instructions

Slice donuts in half and set aside.
In the bowl of a stand mixer, combine cream, sugar and vanilla. Using the whisk attachment, whip until stiff peaks form. (Alternatively, you can whip the mixture with a hand mixer.)
Arrange donuts on a serving platter, open the donuts and set the tops aside. Dollop large spoonfuls of whipped cream onto the bottom half of each donut. Top each with sliced strawberries and cover with the top half of the donut. Dollop more whipped cream into the center of each donut and garnish with a strawberry slice.
