Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

3 lb. green beans
4 tbsp. butter
3/4 c. walnuts
3 clove garlic
1 tbsp. lemon juice
1 lemon, finely grated (yellow rind only
1/2 tsp. salt
1/4 tsp. Freshly ground black pepper

Instructions

Fill a large pot halfway with water. Bring to a boil. Add beans and cook 6 minutes or until crisp-tender. Drain in a colander; rinse with cold water until cool. Pat dry with paper towels.
In same pot, melt butter over medium heat. Add walnuts and garlic and cook, stirring frequently, 2 to 3 minutes, or until garlic begins to turn golden. Turn walnut mixture into a small bowl.
Add green beans and lemon juice to pot. Cook, tossing frequently, 3 to 4 minutes, or until hot. Add walnut mixture, grated lemon, salt, and black pepper and toss well.
