Ingredients

1 skinless chicken breast
1/2 cup grapes
1/2 medium celery stalk
1/4 cup pecans, chopped
1/2 oz red onion
1 tsp Dijon mustard
3 tbsps fat free mayonnaise
1 1/2 oz nonfat plain Greek yogurt
50 leaves spinach
5 croissants

Instructions

1. Boil chicken breast for 20 minutes or until all pink is cooked out.

2. Drain water and finely chop chicken breast. Spread out chicken breast on chilled plate and place in refrigerator for quick cool down.

3. While chicken is chilling, finely chop all other ingredients except spinach then mix with chilled chicken in a bowl.

4. Stir in mayonnaise, mustard and yogurt.

5. Divide mixture into 5 parts and place on split croissants lined with 10 spinach leaves.
