Ingredients
2 tbsps olive oil
4 breasts, bone and skin removed chicken breasts
1 cup chicken stock
12 small black olives, chopped
1 tsp leaves mixed herbs
1 lemon, sliced
1/3 tbsp fresh parsley, chopped
1 oz vegetable fat spread
1/3 tbsp honey
18 oz new potatoes, boiled
Instructions
1. Heat the oil in a saucepan and fry the chicken until lightly browned.
2. Add the stock, mixed herbs and lemon. Cover and simmer for 20 minutes.
3. Remove chicken and whisk in parsley, spread and honey. Boil and reduce until slightly thickened.
4. Replace chicken and reheat.
5. Serve with the boiled new potatoes and your choice of mixed vegetables.
