Vegetable cooking spray
4 skinless, boneless chicken breast half
1 large red or green pepper
2 tsp. chili powder
1 tsp. garlic powder
4 c. Swanson® Chicken Broth
1 package frozen whole kernel corn
1 c. cooked rice
1 tsp. chopped fresh cilantro leaves or parsley
5 Lime wedges
Instructions
Spray a 4-quart saucepan with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken, pepper, chili powder and garlic powder and cook for 5 minutes, stirring often.
Stir the broth, corn and rice in the saucepan and heat to a boil. Reduce the heat to low. Cook for 10 minutes or until the chicken is cooked through. Stir in the cilantro. Serve with the lime wedges.
