Ingredients

1/2 c. peanut butter
1/4 c. water
1 tbsp. melted butter
2 cloves garlic
1 chipotle chile in adobo
3 tbsp. adobo sauce
1/2 tsp. salt
1 lb. skinless, boneless chicken breasts
1 tbsp. lime jice
Tortillas, for serving
Cilantro, for serving
Red cabbage, for serving

Instructions

Puree peanut butter, water, butter, garlic, chipotle, adobo sauce and salt until smooth. Pour into 2-quart baking dish. Add chicken, turning to coat.
Cover with foil; bake at 400 degrees F 30 minutes or until chicken is cooked (165 degrees F).
Slice chicken, then drizzle with lime juice. Serve with tortillas, cilantro, and red cabbage.
