Cooking spray
1 pound yellow squash, cut into 1/4-in.-thick slices
2 ounces sharp cheddar cheese, shredded (about 1/2 cup)
2 tablespoons whole-wheat panko (Japanese breadcrumbs)
1 tablespoon finely chopped fresh chives
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Instructions

Preheat broiler to high.
Coat a foil-lined baking sheet with cooking spray. Arrange squash in a single layer on pan; sprinkle evenly with cheese and panko. Broil 3 to 4 minutes or until cheese melts and squash begins to brown. Remove pan from oven; sprinkle with chives, salt, and pepper.
