Appetizer: Baked Sweet Onion Omelet

Ingredients

9 large eggs
3 large egg whites
1 cup asparagus
8 tbsps sweet onion salsa
4 oz fat free cheddar, shredded
1/2 cup pieces turkey bacon
3 tbsps parmesan cheese
1 tbsp pepper
2 tsps season salt
6 oz fat free sour cream

Instructions

1. Pre-heat oven to 400° F (200° C).

2. Cut bacon into pieces and fry in a pan.

3. Cool cooked bacon on a paper towel.

4. Mix all ingredients together except for the sour cream when the bacon is cool.

5. Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.

6. Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.

7. Cut eggs into 6 pieces and serve with sour cream on top.
