Lunch: Gingerbread Men

You obviously need a gingerbread-man cutter to make this shape, but any decorative cutter — a star, diamond, heart, or whatever shape you may already have in your kitchen — can be used for this recipe.

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 stick butter
1/3 c. firmly packed light brown sugar
1/2 c. golden syrup or honey
3 c. all-purpose flour
2 tsp. ground ginger
2 tsp. ground cinnamon
1/2 tsp. ground cloves
2 tsp. baking soda
1 egg
1 tsp. vanilla extract

Instructions

Preheat oven to 350 degrees F/325 degrees F in a convection or fan-forced oven. Grease oven trays.
Heat butter, sugar, and golden syrup (or honey) in small microwave-safe bowl, uncovered, on high in microwave oven about 1 minute or until butter has melted. Using oven mitts, remove bowl from microwave oven; cool butter mixture 5 minutes.
Sift combined flour, spices, and baking soda into large bowl; add butter mixture, egg, and extract, and stir with a wooden spoon until combined.
Divide dough in half; knead each portion of dough on floured surface. Using a rolling pin, roll dough out to 1/4-inch thickness. Using gingerbread-man cutter, cut out shapes; place on oven trays.
Bake gingerbread men about 10 minutes or until golden brown. Cool on trays.
Make royal icing. Decorate gingerbread men with royal icing.
To make the royal icing: Beat egg white in small bowl with electric mixer until just frothy; gradually add sifted powdered sugar, beating between additions, until stiff peaks form. Tint icing as desired, using food coloring.
