Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

1 salmon fillet (3 pounds)
1/2 cup prepared pesto
2 green onions, finely chopped
1/4 cup lemon juice
2 garlic cloves, minced

Instructions

Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5 minutes.
In a small bowl, combine the pesto, onions, lemon juice and garlic. Carefully spoon some of the pesto mixture over salmon. Grill 15-20 minutes longer or until fish flakes easily with a fork, basting occasionally with remaining pesto mixture.
