Health and fertility benefits of Basic Pesto

Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

2 cups fresh basil leaves
1/2 cup freshly grated Parmesan
1/4 cup pine nuts
2 tablespoons chopped fresh Italian parsley
2 tablespoons chopped fresh Greek oregano leaves
3 large cloves garlic
1/2 cup extra-virgin olive oil
Serving suggestion: fresh pasta

Instructions

Combine the basil, Parmesan, pine nuts, parsley, oregano and garlic in a food processor or blender and process until finely ground. With the machine running, slowly add the olive oil. Let stand for 5 minutes before using. Store in the refrigerator for up to 1 week. Serve with fresh pasta.
