Health and fertility benefits of Hazelnut-Cranberry Rice

Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

3 tablespoons vegetable oil
2 1/3 cups white rice
1 cup wild rice
2 tablespoons salt
1 teaspoon ground black pepper
1 bay leaf
1 white onion, diced
4 cups fish or chicken stock
1 cup dried cranberries
1 cup toasted hazelnuts

Instructions

Preheat the oven to 350 degrees F. Heat the oil in a large ovenproof pot over medium heat. Add the white rice, wild rice, salt, pepper, bay leaf and onions and cook until the white rice begins to brown, 8 to 10 minutes. Add the stock, cranberries and hazelnuts; bring to a boil, then cover and transfer to the oven. Bake until the rice is tender, about 45 minutes.
