Dessert: No-Bake Chocolate and Cream Cheese Pie
Recipe by Sandy Krasner, Longmeadow MA Garnish with whipped cream and chocolate shavings for a lovely presentation.
Ingredients
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1/2 cup whipping cream
1 ounce unsweetened chocolate, chopped
2 8-ounce packages cream cheese, room temperature
1 1/4 cups powdered sugar
1 tablespoon vanilla extract
1 6-ounce purchased chocolate crumb crust
Instructions
Combine bittersweet chocolate, cream and unsweetened chocolate in heavy medium saucepan. Stir over medium-low heat until melted and smooth. Cool to just lukewarm.
Beat next 3 ingredients in large bowl until well blended. Beat in chocolate mixture. Spoon filling into crust; smooth top. Cover and refrigerate at least 6 hours and up to 2 days. Serve chilled.
