Ingredients
10 large eggs
1/2 c. low-fat (1%) milk
1/4 c. snipped fresh chives
Pepper
1 tbsp. margarine or butter
6 oz. thinly sliced smoked salmon
Instructions
In large bowl, whisk eggs, milk, 3 tablespoons chives, and 1/4 teaspoon freshly ground black pepper until blended.
In 12-inch nonstick skillet, melt margarine on medium. Add egg mixture to skillet. As egg mixture begins to set around edge, move it gently toward center with spatula to allow uncooked eggs to flow toward side of pan. When eggs are partially cooked, after about 5 minutes, add salmon; cook 1 minute longer or until egg mixture is set but still moist, stirring occasionally. Sprinkle with remaining chives to serve.
