Health and fertility benefits of Spiked Hot Chocolate

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

2 cups heavy cream
2 cups whole milk
7 ounces dark chocolate
2 cinnamon sticks
1 tablespoon honey
1 tablespoon brown sugar
2 teaspoons vanilla extract
1/4 cup dark rum

Instructions

In a medium saucepan, heat the heavy cream and milk over medium-low heat. Chop the chocolate into small pieces and add it to the milk mixture, whisking constantly. Still whisking, add the cinnamon sticks, honey and brown sugar. Once the chocolate has completely melted, remove from the heat and add the vanilla and rum. Continue to whisk until a slight froth begins to form and everything is heated through. When ready to serve, remove the cinnamon sticks.
