Ingredients
7 oz. lowfat kielbasa (half of a 14-oz pkg)
2 1/2 c. chicken broth
1 can Cajun stewed tomatoes
1 1/2 c. frozen pepper stir-fry mixture (yellow green and red bell pepper strips and onions)
1 box frozen sliced okra
1 c. uncooked 5-minute rice
1 box refrigerated skinless, fully cooked chicken breast
Instructions
Cook kielbasa in a 3-qt saucepan over medium-high heat, stirring often, 3 minutes, or until lightly browned.
Add broth, tomatoes and stir-fry mixture. Cover and bring to a boil over high heat. Add okra; simmer 3 minutes. Stir in rice.
Cover and simmer 1 to 2 minutes, or until vegetables and rice are tender. Stir in chicken; heat and serve.
