Lunch: Diane Wells's Pepperoni Rolls

Diane Wells, mother of Arizona Cardinals left guard Reggie Wells, offers guests these super-easy, pepperoni-stuffed rolls during games.

Ingredients

36 Rhodes frozen rolls
1/2 lb. sliced pepperoni
Italian seasoning
grated Parmesan cheese
Pam Olive Oil Spray
marinara sauce

Instructions

Place a dozen frozen rolls on a paper plate. Spray frozen rolls with Pam.
Place in microwave to quick defrost for about 1 minute on 50% power. Repeat with remaining 2 dozen rolls.
Spread each roll out into the size of the palm of your hand and place 6-8 slices of pepperoni on top of the dough.
Pull the corners of the dough over the pepperoni, spreading evenly, and pinch the top of the dough to seal it into a roll.
Place all stuffed rolls into an oil-sprayed muffin pan and lightly sprinkle Italian seasoning and Parmesan cheese on top.
Cover with wax or parchment paper and towel for several hours to allow rolls to rise. Once risen, bake at 350 degrees F for 10-15 minutes until golden brown.
Remove from oven, spray with Pam Olive Oil, and add additional Parmesan cheese.
Serve hot with marinara dipping sauce.
