Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

3 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
3 large eggs
1 c. sugar
1/2 c. unsalted butter
1 tsp. almond extract
1 tsp. vanilla extract
1 c. salted macadamia nuts
3/4 c. sweetened shredded coconut
3/4 c. dried cranberries
1/2 c. chopped dried mango
3 tbsp. finely chopped crystallized ginger

Instructions

Heat oven to 325 degrees F. Grease 2 large cookie sheets.
In a medium bowl, mix flour, baking powder, and salt.
In a large bowl, with a mixer at medium speed, beat eggs and sugar 1 minute. Add butter, almond extract, and vanilla extract; beat until blended. Reduce mixer speed to low and gradually add flour mixture, beating just until blended. With a spoon, stir in macadamia nuts, coconut, cranberries, mango, and crystallized ginger.
Divide dough into 3 equal pieces. On 1 cookie sheet, shape 2 pieces dough into 12x2-inch logs, 3 inches apart. Repeat with remaining piece of dough on second cookie sheet.
Bake 28 to 30 minutes, or until firm, rotating cookie sheets halfway through baking. Cool on sheets on wire racks 30 minutes.
Reduce oven temperature to 275 degrees F. Place logs on cutting board and with a serrated knife, cut logs crosswise on a sharp diagonal into 1/2-inch-thick slices. Place slices upright, 1/2-inch apart on cookie sheets.
Bake 30 minutes to dry cookies, rotating cookie sheets once. Cool completely.
