Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 tablespoon butter
2 tablespoons white sugar
2 tablespoons all-purpose flour
1 tablespoon nonfat dry milk powder
1/8 teaspoon baking powder
1/8 teaspoon ground cinnamon
1 pinch salt
2 tablespoons water
1 (4 ounce) container diced peaches, well drained

Instructions

Place butter into a microwave-safe cup and heat on high in microwave until melted, about 20 seconds.
Combine sugar, flour, milk powder, baking powder, cinnamon, and salt in a small bowl; add water and stir. Transfer sugar mixture to the mug and stir with a fork until batter is well mixed. Add peaches to top of batter.
Heat in the microwave on 70 percent power for 2 minutes. Let mug stand in the microwave for 1 minute more. Cool slightly.
