Dessert: S'mores Pancakes

Recipe by Candace Braun Davison We heated the Marshmallow Fluff up for 5 to 10 seconds in the microwave—no longer, or else it can puff up and create a sticky mess—to make it easier to spread.

Ingredients

1 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1 tbsp. sugar
1 1/3 c. cold milk
1 cold egg
2 tbsp. butter, melted

Instructions

Make the pancakes: Mix the flour, baking powder, salt and sugar in a large bowl, then add the milk and egg, stirring to combine and breaking up any large lumps.
Lightly grease a frying pan, then put it over medium-high heat, giving it a minute or so to warm up. Pour about 1/4-cup pancake batter onto the pan, spreading it out evenly. When a lip forms around the edge of the pancake and little bubbles appear in the batter, flip. Cook both sides until lightly golden.
Make the s'mores stack: Combine the chocolate chips and butter in a microwave-safe bowl and heat in the microwave in 20-second intervals, stirring in between, until the chocolate has fully melted and formed a sauce.
Spread chocolate sauce on top of the first pancake, sprinkle with graham cracker bits, then top with another pancake. Spread Marshmallow Fluff on that, sprinkle with graham cracker crumbs, then top with another pancake. Repeat until you've reached the top. Top the entire stack with more crumbled graham crackers, mini marshmallows and drizzle with syrup just before serving.
