Ingredients

2 tbsp. organic canola oil
5 clove organic garlic
1 medium organic onion
1 stalk organic celery
2 lb. organic grass-fed ground beef
1/3 c. organic tomato paste
1 tbsp. organic tomato paste
1 tbsp. organic ground coriander seed
1 can organic peeled tomatoes
1/2 c. organic agave syrup
1 tsp. organic Worcestershire sauce
1 tsp. organic cider vinegar
Salt and freshly ground black pepper

Instructions

Heat oil in a large skillet and add garlic. As the garlic browns, add onion and celery and cook for a few minutes, until the onion begins to soften. Add meat and cook until the meat is no longer pink. Briefly drain this mixture in a fine mesh strainer and discard the liquid.
Place the meat back in the pan on a lively flame, add tomato paste, and completely incorporate the paste throughout. Add coriander seed and fry for a few more moments. Add tomatoes, agave syrup, Worcestershire sauce, vinegar, and salt and pepper.
Cook on a medium flame for 15 minutes until the sauce is slightly reduced.
