Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 cups oat bran
1/4 cup packed brown sugar
1/2 tbsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1 cup skim milk
2 large eggs
1/4 cup honey
2 tbsps corn oil
1 cup quartered or chopped apple
1/4 cup grated carrot
1/2 cup chopped pecans
2 tsps baking powder

Instructions

1. Preheat oven to 350 °F (175 °C) Spray bottom of muffin tins with non-stick cooking spray.

2. Combine oat bran, brown sugar, baking powder, salt, cinnamon, nutmeg and allspice in one bowl.

3. Mix together milk, egg and honey; add milk and egg mixture to oat bran mixture and stir until moistened.

4. Add grated apple, carrot and pecans.

5. Fill muffin cups 1/2 to 2/3 full.

6. Bake at 350 °F for 15 to 17 minutes. Tops will brown only slightly.
