Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Ingredients

1/4 c. sliced almonds
1 tbsp. butter or margarine
2 large McIntosh apples
2 tbsp. packed light-brown sugar
1/4 tsp. ground cinnamon
1 pinch ground nutmeg
1 pinch ground cloves
1/4 c. apple juice

Instructions

Toast almonds in a nonstick medium skillet over medium heat, stirring occasionally, until golden. Remove to a small bowl.
Heat butter in same skillet. Add remaining ingredients and cook over medium heat, stirring often, 3 to 4 minutes until apples are tender. Stir in apple juice and bring to a boil.
Remove skillet from heat and let cool slightly. Just before serving, stir in toasted almonds.
