Lunch: Light and Fluffy Quinoa

Ingredients

2-1/2 cups Chicken Or Vegetable Broth
2 teaspoons Kosher Salt
2 cups Dry Quinoa
2 cups Minced Fresh Herbs (I Used Flat Leaf Parsley And Fresh Mint)
1/2 cup Minced Shallot
1 cup Cherry Tomatoes, Halved

Instructions

Bring the chicken broth and the salt to a simmer over medium heat. Pour in the quinoa and stir well, then let the quinoa come back to a simmer.
Put the lid on the pot and turn the heat to low. Let the quinoa simmer for 20 minutes and then turn the heat off and let the quinoa sit in the pot with the lid on for at least 20 minutes.
Fluff the quinoa with a fork and transfer it to a bowl.
Add tons of fresh herbs and minced shallots or onion and stir well to combine. Add in anything else you would like—it could be shredded chicken, cherry tomatoes, toasted almonds, olives, etc.
