Health and fertility benefits of Lemon Magic Bars

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

1 roll Pillsbury™ refrigerated sugar cookies
1 teaspoon grated lemon peel
1 1/2 cups white vanilla baking chips (9 oz)
3/4 cup sweetened shredded coconut
1/2 cup chopped macadamia nuts, if desired
1 can (14 oz) fat-free sweetened condensed milk (not evaporated)
1 tablespoon lemon juice
1/4 teaspoon lemon extract, if desired

Instructions

Heat oven to 350 °F. Line 13x9-inch pan with foil; spray foil with cooking spray.

In small bowl, stir together condensed milk, lemon juice and lemon extract. Pour over top.
Bake 28 to 35 minutes or until edges are golden brown and center is slightly glossy. Cool completely, about 45 minutes. Cut into 6 rows by 4 rows.
