Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/2 gallon vanilla ice cream, softened
1/4 cup thawed orange juice concentrate
1-1/2 to 2 teaspoons ground cinnamon
3 cups fresh or frozen blueberries
2 cups fresh or frozen raspberries
1 tablespoon lemon juice
1/2 cup sugar
2 tablespoons cornstarch

Instructions

In a large bowl, combine ice cream, orange juice concentrate and cinnamon. Cover and freeze for 2-3 hours or until firm.
Meanwhile, combine berries and lemon juice in a saucepan; cover and cook over low heat for 10 minutes, stirring occasionally. Combine sugar and cornstarch; stir into pan. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Remove from the heat. Cool; cover and refrigerate.
To serve, spoon ice cream into a bowl or parfait glass; top with the berry sauce.
