Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

3 medium sweet potatoes, peeled and cut into large chunks
Salt
1/2 stick unsalted butter
1/3 cup sugar
2 large eggs, lightly beaten
1 1/2 cups whole milk
1 teaspoon lemon extract
1/2 teaspoon vanilla extract
3/4 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 prebaked 9 1/2-inch frozen pie crust, thawed

Instructions

Preheat the oven to 350 degrees F.
Place the sweet potato chunks in salted water. Place over medium-high heat and boil until tender, 25 to 30 minutes. Drain and place back into the same pot. Add the butter and sugar. Using a masher, begin mashing the sweet potatoes until the butter is melted and all the ingredients are combined. Make sure the sweet potato mixture is smooth and free of lumps. Place the sweet potato mixture into a large bowl.
In a bowl, whisk together the eggs, milk, extracts, cinnamon and nutmeg. Add the milk mixture to the sweet potato mixture. Pour into the pie crust. Bake until the filling is set and the tip of a knife comes out clean when inserted into the center, 45 to 50 minutes. Cool completely before slicing.
