Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

2 tsp. unflavored gelatin
2 tbsp. cold water
2 c. eggnog
2 tbsp. eggnog
1/4 c. brown sugar
2 tbsp. butter
1 pinch salt
1/3 c. walnuts

Instructions

In a cup, sprinkle gelatin over cold water. In a 2-quart saucepan, heat 2 cups eggnog until just bubbling.
Remove from heat; stir in gelatin to dissolve. Divide among 6 (4-ounce) custard cups. Refrigerate until set, at least 4 hours.
In a 2-quart saucepan, heat brown sugar and butter on medium until bubbling, stirring.
Stir in 2 tablespoons eggnog, salt, and walnuts. Spoon over panna cotta.
