Ingredients
2 lbs boneless skinless chicken thighs
1 Tbsp cornstarch
1/4 cup coconut flour
salt and pepper
3 Tbsp coconut oil
1/4 cup orange juice
2 Tbsp fish sauce
2 Tbsp GF soy sauce
1 1/2 tsp orange extract
2 tsp xylitol (optional)
1 cup water
1/2 tsp ground coriander
1 Tbsp orange zest
1/4 tsp red pepper flakes
1/4 tsp sesame seeds
2 Tbsp scallions, chopped
Instructions
Chop the chicken into bite-sized pieces.
Combine cornstarch and coconut flour in a bowl and season with salt and pepper.
Add chicken to the flour mixture and toss until well coated.
In a large pan, heat the coconut oil over medium-high heat.
Cook the chicken until golden brown.
While the chicken is cooking, combine the orange juice, fish sauce, soy sauce, orange extract, sweetener, water, and coriander in a blender.
Blend until smooth.
When chicken is done, remove and set aside.
Pour the sauce mixture into the pan and let it reduce by about half.
Add the chicken back to the pan and toss to coat thoroughly with the sauce.
Cook for 2 minutes. Add the orange zest, sesame seeds, red pepper flakes and scallions and cook for another minute.
Remove from heat and garnish with more orange zest if desired.
