Recipe by Robin Bashinsky This bright and refreshing salad could not be easier to toss together and makes a fantastic side dish for taco night. Crisp jicama and juicy-sweet oranges make for quite the dream-team.

Ingredients

1 1/2 tablespoons lime juice
1 1/2 tablespoons olive oil
1 teaspoon honey
1/4 teaspoon kosher salt
1 1/2 cups orange sections
1 1/2 cups julienne-cut peeled jicama
1/4 cup fresh cilantro leaves
2 tablespoons pepitas (toasted pumpkinseed kernels)

Instructions

Combine first 4 ingredients in a large bowl. Add orange and jicama; toss. Top with cilantro and pepitas.
