Lunch: Celery-and-Celery-Root Salad
This pretty, refreshing salad is one of the healthy options on Prime Meats' indulgent menu, combining sliced celery, celery leaves, and thin strips of celery root.
Ingredients
1 tbsp. cider vinegar
1/4 c. sunflower oil
salt
Freshly ground pepper
1 medium celery root
3 celery ribs
1/4 c. celery leaves
3 large radishes
1/4 c. parsley leaves
Instructions
In a bowl, whisk the vinegar with the oil and season with salt and pepper. Add the celery root, celery, radishes, celery leaves, and parsley and toss to combine. Let stand for 5 minutes before serving.
