Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. One tbsp of honey has a glycemic index (GI) of 55. Brown rice is a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

2 cups Old Fashioned Oats
1/2 cup Dried Cranberries
1/2 cup Pumpkin Seeds
1/2 cup Almond Flour
1/2 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/4 cup Honey
1/2 cup Corn Syrup Or Brown Rice Syrup
4 Tablespoons Unsalted Butter

Instructions

Preheat oven to 350 ºF. Butter an 8x8 pan or line with parchment paper.
In a large bowl, stir to combine oats, cranberries, pumpkin seeds, almond flour, cinnamon, and salt. Set aside.
In a small saucepan, bring honey, corn syrup, and butter to a boil over medium high heat, then cook for 3 minutes. Remove from heat and pour all over the oat mixture. Press into an 8x8 pan, compacting very well. Bake for 20 minutes until slightly golden on the edges.
Flip the granola square out of the pan and let cool on a flat surface. Cut into bars and enjoy!
Recipe note: The amount of wet ingredients used is the bare minimum for holding together. You may find you like to double the wet ingredients for a more sticky and sweet bar.
Storage: The granola bars will keep for 4 –5 days at room temperature.
