Health and fertility benefits of Cheesy Spinach Rice
Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility. Brown rice is a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.
Ingredients
2 large eggs
3 oz goats cheese
2 tbsps pesto
1 dash salt
4 cups spinach
1/2 cup cooked brown rice
3 tbsps cream cheese, low fat
1/2 cup grated parmesan cheese
Instructions
1. Pre-heat oven to 400° F (200° C).
2. Spray pie pan with spray oil.
3. Mix all ingredients.
4. Pour into pan.
5. Bake 20 minutes or until bubbly.
6. Grab a fork and enjoy.
7. Note: this recipe was a "surprise" as it was so delicious my 14 year old daughter licked the pan!
