Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
Ingredients
2 medium tomatoes, diced or sliced (about 2 cups)
1 teaspoon dried basil
1 teaspoon chopped garlic
1/2 teaspoon salt (optional)
1/8 teaspoon ground black pepper
Instructions
Mix ingredients and let set at room temperature for at least 1 hour.
Serve plain or on a lettuce leaf
