Lunch: Chicken Joes

This recipe is our better-for-you version of sloppy joes with the same great taste!

Ingredients

¾ pound ground chicken
1 small onion, minced
2 cloves garlic, minced
1 teaspoon chili powder
½ teaspoon paprika
salt, to taste
1 red or green pepper, chopped
¾ cup diced zucchini
1, 14.5-ounce can diced tomatoes, drained
½ cup bottled BBQ sauce (look for a brand with the lowest amount of sugar)
4 toasted whole-wheat hamburger buns

Instructions

In a large skillet, cook the ground chicken, onion, garlic, chili powder, paprika, salt, and pepper over medium heat until meat is browned, about 5-6 minutes.
Add in the green or red pepper and zucchini and cook over low heat for about 5 minutes, until vegetables are tender. Add the diced tomatoes and BBQ sauce and simmer for 10 minutes.
Serve the mixture over half of a toasted bun.
